Sweet and Sour Meatballs

Meatballs are a favorite in most households and loved by kids and kids alike. They are very versatile, they can be served as an appetizer, as a main dish, with soup or with pasta.
Meatballs are usually made with ground beef. Ground chicken, pork or turkey can also be used. These are done by combining the meat with all the ingredients such as bread crumbs, eggs, minced onion, garlic powder, pepper and other seasonings, then rolled in to a ball. Meatballs are cooked by frying, steaming, baking or braising in sauce.
In this recipe, I braised the meatballs in pineapple juice and thickened the sauce with cornstarch, then added green and red bell pepper, carrots, celery and pineapple chunks. This dish is perfectly served with steamed rice.
Ingredients: For Meatballs
  • 2 lb. Ground Beef
  • 1 cup Bread crumbs
  • 2 medium Eggs
  • 1 onion (finely chopped)
  • 1/2 Green Bell Pepper (finely chopped)
  • 1/2 Red Bell Pepper (finely chopped)
  • 1 small Carrots (peeled, finely chopped)
  • 1 tbsp. Garlic Powder
  • 1 tsp. Salt
  • 1/2 tsp. Ground Black Pepper
     
    For Sweet and Sour Sauce
  • 1 can Pineapple Chunks
  • 4 cloves Fresh Garlic (minced)
  • 1 medium Onion (peeled and quartered)
  • 1 medium size Carrots (peeled, washed and cut diagonally
  • 1/2 Green Bell Pepper (cut into serving pieces)
  • 1/2 Red Bell Pepper (cut into serving pieces)
  • 2 stalks Celery (washed and cut into serving pieces)
  • Juice from Pineapple Chunk
  • 1/8 cup White Vinegar
  • 2 tbsp. Cornstarch
  • Salt and pepper to taste
  • 2 tbsp. Canola Oil
  • 1-1/2 cup Water
Let's Cook!
  1.   in a large bowl, combine all the meatballs' ingredients together and mix thoroughly until well blended.
  2. Shape in a golf ball-sized balls. 
  3. Set aside.
  4. In a large pan or skillet over medium heat, lightly brown the meatballs and set aside.
  5. In a medium bowl, combine pineapple juice, water, vinegar, salt and pepper and cornstarch. Mix thoroughly.
  6. In a larger pan or pot over medium heat, pour canola oil.
  7. When oil is hot enough, saute minced fresh garlic and onion until translucent. 
  8. Pour in sauce mixture and bring to a boil.
  9. Reduce heat then add meatballs.
  10. Simmer for 20 to 25 minutes, stirring occasionally.
  11. Add carrots and pineapple chunks then simmer for 2 minutes.
  12. Put in red bell pepper, green bell pepper and celery.
  13. Turn off heat immediately to avoid over cooking of the vegetables.
  14. Dish out with steamed rice.
  15. Share and enjoy!
